An Island business is using a chemical imaging machine to look inside their potatoes without peeling them.
P-E-I Potato Solutions purchased the million-dollar machine to improve quality and safety inspections for their farmers and potato processors.
The company near Kensington received more than 400-thousand dollars in repayable contributions from the federal and provincial governments to help with the purchase.
The machine takes digital images of the potatoes before they’re processed to identify defects and foreign objects
